Whole Wheat Dark Chocolate Pumpkin Muffins (Vegan Option)
Serves: 22 - 24 Ingredients:
3 cups white whole wheat or regular whole wheat flour
1 cup white sugar
1/2 cup brown sugar
2 tsp baking powder
1 tsp baking soda
2 tsp pumpkin pie spice
1 tsp salt
1 15oz can pumpkin puree (not pumpkin pie filling)
1 cup almond or soy milk
1 cup olive oil
1 cup dark chocolate chunks or chips (Can use milk-free chocolate for a vegan option)
Directions:
Preheat oven to 400 F.
Mix flour through salt in a large bowl.
Mix pumpkin puree through oil in a medium bowl.
Add pumpkin mixture to the large bowl and fold together until just combined. *DO NOT over mix* Fold in dark chocolate until just combined.
Pour batter in muffin tins coated with nonstick spray and top with course sugar, if desired. Using an ice cream scoop can be useful for measuring equal portions.
Bake for 18 - 20 minutes until toothpick comes out clean.
