3 cups white whole wheat or regular whole wheat flour
1 cup white sugar
1/2 cup brown sugar
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1 tsp nutmeg
1 tsp salt
3 ripe bananas, mashed
1 cup almond or soy milk
1 cup olive or vegetable oil
Directions:
Preheat oven to 400 F.
Mix flour through salt in a large bowl.
Add banana through oil in a medium bowl.
Add banana mixture to the large bowl and fold together until just combined. *DO NOT over mix*
Pour batter in muffin tins coated with nonstick spray and top with course sugar, if desired. Using an ice cream scoop can be useful for measuring equal portions.
Bake for 18 - 20 minutes until toothpick comes out clean.
