 Vegan Maple Almond Banana Muffins

Makes: 12​
Ingredients

Muffins:
  • 2 cups white whole wheat flour
  • 1 cup brown sugar, packed
  • 1 T baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 cup mashed ripe banana (2-3 medium bananas)
  • ½ cup milk of choice
  • ½ cup olive or vegetable oil
  • 1 tsp vanilla extract
  • ¼ cup good maple syrup
  • ½ cup almonds, chopped
 
Cinnamon Glaze
  • 1 cup powdered sugar
  • 1-2 T water
  • ½ tsp cinnamon
  • Dash of salt
 
Directions
Muffins:
  1. Preheat oven to 400 degrees F. Spray muffin tin cups with nonstick spray.
  2. In a medium bowl, combine the flour, brown sugar, baking powder, salt, cinnamon and nutmeg.
  3. In a separate medium bowl, whisk together the mashed banana, milk, oil, vanilla and maple syrup. Pour wet ingredients into dry and mix until just combined. Do not over-mix. Fold in chopped almonds.
  4. Pour batter into muffin tin and bake 17-20 minute, until toothpick inserted into the center comes out clean. Cool completely, pour glaze over top of muffins and allow to set.

Cinnamon Glaze:Combined all ingredients in a small bowl and whisk until smooth. If too thick, add a small amount of water. If too thin, add more sugar.​
