Single Serve Whole Wheat Pancakes

Makes: 3 small pancakes
Ingredients:
  • 1/3 cup whole wheat flour 
  • 1/2 Tbsp sugar 
  • 1/2 tsp baking powder 
  • Dash of cinnamon 
  •  Dash of salt 
  • 1 egg
  • 1/4 cup milk of choice
  • 1/2 Tbsp melted butter or vegetable oil 
  • 1/2 tsp vanilla extract 
  • Optional add-ins: Banana slices, blueberries, chocolate chips etc. 
  • Optional toppers: Maple syrup, Greek yogurt, ricotta cheese, berries, nuts etc. 

Directions
  1. In a medium bowl, sift together the flour, sugar, baking powder, cinnamon and salt. 
  2. In another bowl, whisk together the egg, milk, melted butter or vegetables oil and vanilla extract. 
  3. Pour the wet ingredients into the dry, folding together until just combined. Do not over mix. 
  4. Heat griddle over medium heat and coat pan with nonstick spray. Ladle batter onto heated pan and sprinkle any desired add-ins over surface. Flip when bubbles form and edges have browned. 
  5. When done, serve with desired toppings.
