Roasted Parmesan Crusted Brussel Sprouts

Serves: 6 - 8
Ingredients:
  • 1 1/2 lbs brussel sprouts
  • 1/4 cup olive oil 
  • 1/4 cup panko bread crumbs
  • 1/4 cup parmesan cheese
  • Salt, pepper and garlic powder, to taste
  • Optional garnish: Pomegranate seeds 

Directions
  1. Preheat oven to 400 F. Trim base from each brussel sprout and cut in half. ​
  2. Place sprouts on a baking sheet coated with nonstick spray and toss with olive oil. 
  3. Sprinkle bread crumbs, parmesan and seasoning over top, tossing to combine. 
  4. Bake 20 - 25 minutes until cooked through and the edges are crispy.
