Line strainer with double layer of cheesecloth and place over a large bowl. Alternatively, use commercial strainer.
Slowly bring milk, cream and salt to a boil over medium heat, stirring very often to prevent burning. Stir in lemon juice and reduce heat to low. Simmer, stirring constantly, until mixture curdles.
Pour mixture into prepared strainer and allow to drain for 10-15 minutes or longer depending on desired consistency. Discard liquid.
