Orange Chicken

Serves: 4-6
Ingredients
Chicken:
  • 2-3 large chicken breasts
  • 2 tsp baking soda
  • 2 – 3 Tbsp olive oil
  • ½ cup sliced water chestnuts
  • ¼ cup sliced almonds
  • 1 orange, cut into chunks
  • Green onion and sesame seed for garnish
 
Sauce:
  • 3 cloves minced garlic
  • ½ cup orange juice
  • ½ cup honey
  • 1/3 cup low sodium soy sauce
  • ¼ cup rice wine vinegar
  • 2 T cornstarch
  • ½ tsp ground ginger
  • ¼ tsp black pepper
  • Zest of one orange
  • Pinch of red pepper flakes (optional)
 
Directions:
  1. Whisk all sauce ingredients together in a medium bowl and set aside.
  2. Combine sliced chicken breast and baking soda in a medium bowl, tossing well to combine. Marinate in refrigerator for 20 minutes.
  3. Rinse well under running water and pat dry.
  4. Heat oil in a large pan over medium-high heat. Add chicken and sauté for 4-6 minutes, stirring occasionally, until browned on all sides.
  5. Pour prepared orange sauce over chicken, stir to combine. Allow sauce to boil for a moment until thickened. Reduce heat to medium-low and simmer until chicken is cooked through.
  6. Add water chestnuts, almonds and orange chunks, stirring to combine. Top with green onion and sesame seeds to garnish. 

​NOTE: For super tender chicken in any recipe like this one, toss every 8oz of chicken with ¾ tsp baking soda. Refrigerate for 20 minutes, rinse, pat dry and use per recipe.
