Place potatoes in a large pot and just cover with water. Bring to a rolling boil and boil for approximately 10-15 minutes until potatoes are cooked through/fork tender.
Drain potatoes making sure to reserve cooking water for later use.
Add potatoes to a standing mixer, or alternatively, mash my hand. Add about 1 cup of potato water, several tablespoons of butter or vegan spread and a generous sprinkle of salt. Whip potatoes, taste and adjust butter, salt and water. Continue process until desired consistency/taste is reached.
