Funfetti Cookies (Vegan Option)

Makes: ~24
Ingredients:
  • 1 cup vegan or regular butter, at room temperature
  • 1½ cups sugar
  • ½ cup milk of choice
  • 2 tsp vanilla extract
  • 3½ cups all purpose flour
  • 2 tsp corn starch
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup rainbow sprinkles
 
Directions:
  1. Preheat oven to 350 F.
  2. Add soft butter and sugar to a large bowl. Cream together and whip until fluffy. Beat in milk and vanilla until combined.
  3. Add in all remaining ingredients besides the sprinkles. Stir until just combined. Do not over mix.
  4. Add sprinkles and fold into batter. Place bowl in the fridge for 20 minutes to set up. Scoop dough into about 1½ Tbsp size, rolling into a ball.
  5. Place on cookie sheet coated with nonstick spray and bake for 13 – 15 minutes until just lightly browned.
  6. Allow to cool and enjoy!
