Butter Basted Cast Iron Steak

Serves: 2 - 4
Ingredients:
  • 2 - 4 steaks (sirloin, filet mignon, NY strip or skirt steak)
  • olive oil 
  • Salt and pepper 
  • Butter
  • 4 fresh thyme sprigs

Directions
  1. Season steaks generously with salt and pepper ​
  2. Heat 1-2 Tbsp of oil in a cast iron skillet over medium-high heat
  3. Wait until the oil is shimmering and sear steaks, about 4-5 minutes per side (longer for thicker pieces and depending on how you prefer your steak cooked) 
  4. When steaks are almost done, turn heat to low, add around 2 Tbsp of butter to your skillet. Once melted, add thyme to the butter, tip the pan so it pools and continually spoon melted butter all over steaks
  5. Top with thyme from pan, remove to a plate and allow to rest 5 minutes before eating
