Breakfast Potatoes

Ingredients 
  • Olive oil 
  • 3-4 large red potatoes, chopped
  • 1/4 small onion, diced
  • 1 small bell pepper, diced
  • Salt and pepper, to taste
  • Optional seasonings: Onion powder, garlic powder, Italian seasoning, thyme
  • Green onion for garnish

Directions
  1. Heat oil in a nonstick pan over medium-high heat. 
  2. Add onion and bell pepper, stirring to combine. Saute until soft, about 5 minutes. Season with salt, stir to combine and remove to a plate. 
  3. Pour a drizzle more of oil to the pan and heat until shimmering. Add diced potatoes, stir, cover and reduce heat to medium. Cook, stirring occasionally, until potatoes are crisp on outside, about 10 minutes. Season generously with salt, pepper and any other desired seasonings, stirring to coat. Cover again and cook until potatoes are soft in the middle and very crisp on the outside. 
  4. Add prepared pepper/onion to the pan, tossing to combine. Taste, adjust seasoning as needed, garnish with green onion and serve while hot. 

Note: This recipe is very flexible! Experiment and add broccoli, mushrooms, bacon bits etc.
