Combine 3 ½ cups flour, yeast, sugar and salt in the bowl of a standing mixer.
While the mixer is running on medium speed, add water and olive oil. Beat until the dough forms into a ball, scraping sides of the mixer as needed. If the dough is too sticky, add additional flour, 1 Tbsp at a time, until the dough comes together and is pliable, but not wet. If the dough is too dry, add additional water, 1 Tbsp at a time.
Scrape the dough onto a lightly floured surface and gently knead into a smooth, firm ball.
Grease a large bowl with a drizzle of olive oil, add the dough, cover with plastic wrap and put in a warm area to rise for about an hour, or until doubled in size.
After an hour, turn the dough onto a lightly floured surface, divide into 2 equal pieces, cover with a clean, dry towel and allow to rest for 10 minutes before rolling out and preparing your pizza.
If you are not making the pizza immediately, you can wrap the dough in plastic and place in the fridge until ready for use. You can also place in a Ziplock bag and freeze
When ready to make pizza, add desired toppings and bake at 500 degrees F for 12 – 15 minutes
