Berries & Goat Cheese Salad
Ingredients:
2-3 cups Spring mix
Strawberries, sliced
Blueberries
Carrots, shredded
Cucumber, thinly sliced
Frozen peas
1 Tbsp olive oil
1-2 Tbsp balsamic vinegar
Cilantro, to taste
Salt and pepper, to taste
2 Tbsp goat cheese
Optional crunchy toppers: Sliced almonds, pomegranate seeds, sunflower seeds etc.
Directions:
Add spring mix through salt and pepper to a medium bowl, tossing well to combine. Taste and adjust seasoning as necessary.
Top with crumbled goat cheese and any additional toppers of choice.
