Apple Crisp

Serves: 6-8
Ingredients
Topping:
  • 1 cup flour
  • 1 cup old fashioned oats
  • 1 cup dark brown sugar
  • ½ cup chopped almonds (optional for extra crunch)
  • 1 stick (1/2 cup) unsalted butter, or butter alternative, softened and cut into pieces

Filling:
  • 6 large, firm apples, peeled cored and thinly sliced                                          (I use fuji or honey crisp)
  • 1 stick (1/2 cup) butter or butter alternative, melted
  • 1/3 cup dark brown sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 T bourbon or spiced rum

Directions
Topping:
  1. Combine flour, oats, brown sugar and almonds in a large bowl until well-combined. Add pieces of butter and, using hands, squeeze the mixture until crumbly sand-like consistency.
  2. Once prepared, place in fridge and begin making filling.

Filling:
  1. Preheat oven to 350 degrees F. Grease a pie plate and set aside.
  2. In a large bowl, toss together the apples, melted butter, brown sugar, vanilla, cinnamon and bourbon until well combined.
  3. Take a heaping ½ cup of topping mixture and toss with apple mixture.
  4. Place apple mixture in prepared pie plate and sprinkle with topping.
  5. Bake on a baking sheet for 55-60 minutes, or until topping is golden brown and filling is bubbling. Remove and cool.
  6. If preparing ahead, re-heat on day of service at 250 – 300 degrees F for 10 – 15 minutes.
