Air Fried General Tso's Cauliflower

Serves: 4
Ingredients:
  • 1 head cauliflower chopped into bite-sized florets
  • Sliced scallions and sesame seeds for garnish
 
Batter:
  • ¾ cup flour of choice
  • ½ cup water
  • ½ cup milk of choice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
 
Sauce:
  • ¼ cup water
  • 1 Tbsp cornstarch
  • 1/3 cup honey
  • 1/3 cup low sodium soy sauce
  • 2 Tbsp packed brown sugar (or more to taste)
  • 1 Tbsp lime juice
  • 1 Tbsp sriracha
  • 2 garlic cloves, minced
  • Dash of ground ginger
 
Directions:
  1. Preheat air fryer to 350 degrees F.
  2. To prepare batter, combine all dry ingredients in a large bowl and mix well to combine. Pour in water/milk and whisk until no lumps remain.
  3. Add cauliflower to bowl and stir well to ensure each floret is evenly coated.
  4. Coat air fryer basket with nonstick spray. Remove florets from bowl one at a time, shaking off excess batter, and place in a single layer in the air fryer basket. Cauliflower pieces should not touch in order to ensure even cooking/crispness. Cook for 15 - 17 minutes, or until outside is crisp. This step may need to be done in 2-3 batches. Reserve cooked florets on a plate, while finishing the remainder.
  5. Meanwhile, prepare the sauce. In a small bowl, combine the water and cornstarch and set aside. In a small saucepan, add all remaining sauce ingredients, stirring well to combine. Bring to a boil over medium-high heat. Once bubbling, add water/cornstarch mixture and stir until thick.
  6. When all florets are done, place in a large bowl. Immediately before service, toss with prepared sauce and garnish with sliced scallions and sesame seeds.
 
Note: If you prefer a large amount of sauce, double the recipe.
